Semiya (Vermicelli) payasam/kheer


Ingredients :

1. Vermicelli (Semiya) - 1 cup
2. Milk – 2 cup
3. sugar – 1 cup
4. water – 1 cup
5. Cashew nuts – 5-10 Nos.
6. Raisins – 5-10 Nos.
7. Cardamom – 2-3 Nos.

How to make :


1. Heat the ghee and fry the vermicelli (Semiya) till light brown.
2. In the meanwhile, boil the milk with water.
3. Add the vermicelli to the boiling Milk and cover it. Keep stirring occasionally.
4. Once the vermicelli becomes soft, add the sugar and continue to stir.
5. Powder the cardamom and add it to the mixture.
6. Then fry the cashew nuts and almonds in ghee and add these.
7. Mix well and boil for about two minutes.
8. Now payasam / Kheer is ready and can be served hot or cold. nts:

How to make Palappam

Ingredients: 1. Rice - 2 cup (soaked in water for 4-5 hrs and drain it) 2. Yeast - 1/2 tsp3. Sugar - 2 tbsp4. Coconut - 1/2 cup5. Cooked rice - 1 cup6. Salt - a pinch
Preparation :
Yeast and sugar mixture - Mix Yeast with sugar in lukewarm water and keep for 10-15 mts. aside.
Grind the ingredients 1, 4 & 5 and water to make it a fine batter. Add the yeast and sugar mixture with the batter and mix well. Allow the batter to ferment for 10-12 hours. Add the salt and mix well before making the Palappam.
Apply oil on the pan before pouring the batter to avoid sticking.
Pour a ladle full of batter on the pan and spread it well by rotating the pan holding both the handles.
Cover the Appachatti (Pan) with a lid and allow it to cook for 2-3 minutes on low flame.
Tasty Palappam is ready to be served with Vegetable Stew or Egg Curry or Chicken Stew.
NOTE : Appachatti is using for making palappam.

How to make pudina chutney

Ingredients - a. Pudina (Mint) leaves - 1 bunch
b. Green chillies – 3 Nos.
c. Tomato – 1 no. (small)
d Salt to taste and some water.

Preparation of chutney –
Wash the ingredients 1, 2 & 3 well then Grind it to a paste with water and salt.

I was always fond of delicious food and whenever I taste something mouth-watering, I try to understand how that tasty dish was created. This way, I learned to cook most of not only the typical Kerala dishes, but also most other Indian dishes. When my friends and family were interested, I cooked yummy dishes for them. I was asked by many to guide them in cooking. So I have gladly taught many people to cook delicious Indian dishes. Here, through this new blog, I would like to share my experience and knowledge about Kerala dishes and other Indian dishes.
